Madhouse Nachos

1 can refried beans
1 bag Madhouse Munchies white corn tortilla chips
1 medium onion, chopped
1 cup shredded pepper jack
1 jalapeno, sliced crosswise, plus extra for garnish
1 can chili, or your favorite chili recipe
1 cup shredded Cheddar
1 cup sour cream
1 cup green onion, chopped
1 tomato, diced

Have all the prepped ingredients easily accessible to assemble nachos.

Preheat the oven to 350 degrees F.

In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of Madhouse Munchies tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.

1 medium onion, chopped
2 cloves garlic, sliced
1 chipotle in adobo sauce, minced
1 tablespoon chili powder
2 teaspoons kosher salt
6 cups chicken broth, low-sodium canned
1 cup corn kernels, fresh or frozen and thawed
1 ripe tomato, chopped
1 cup shredded cooked chicken
1/2 cup cilantro leaves
1/4 cup freshly squeezed lime juice (about 2 limes)
About a dozen corn Madhouse Munchies tortilla chips, broken a bit Lime wedges, optional

7 Layer Taco Dip

Layer one
1 can jalapeno bean dip, spread on bottom of pan
Layer two
1 package avocado dip, spread over bean dip
Layer three
1/2 cup mayonnaise
1/2 cup sour cream
1/2 package taco seasoning mix
Layer four
1 1/2 - 2 cups grated cheddar cheese
Layer five
1 can black olives, drained and sliced
Layer six
2 medium tomatoes, diced
Layer seven
1 bunch green onions, chopped with stems

1. Layer ingredients as indicated above in a 10 inch pie pan.
2. Mix ingredients for Layer 3 together and spread on top of layer 2.
3. Serve with Madhouse Munchies tortilla chips.
